I purchased Joy of Cooking several years ago for myself, thinking I might use it every now and then, but it would probably just sit on my shelf taking up space. After all, what respectable cook doesn't have a copy on their bookshelf?
Little did I know it would be used probably more often than any other cookbook in my collection. I'm technically only able to count two recipes now for #10, but I've definitely used it as a reference for many other things, just not honest-to-goodness recipes.
The Roasted Red Pepper Soup I made for dinner tonight is actually the second time I've made this recipe. The first time, I didn't have the vegetables in the right mix and it seemed to taste too much like carrots. This time, I tried something crazy - I went easy on the carrots. I also added a little bit of hot sauce and it was perfect. OK, so maybe it was just an excuse to use my immersion blender, but I don't care. It was still a darn tasty dinner for a cold night.
